Carbonara pasta is a dish of Italian cuisine. There is a misconception that it dates back to the Roman Empire, but in fact, the first mentions of this paste appeared at the beginning of the twentieth century. The very name of the sauce is associated with coal miners, who supposedly invented this simple, quick and satisfying dish, or with black pepper, which is so thickly sprinkled with carbonara that it looks like it is powdered with coal.

Lovers of Italian cuisine are well aware that strictly certain types of pasta are suitable for each sauce. The creamy, velvety carbonara goes well with long, medium-thick pasta like spaghetti or tagliatelle, but also goes well with various “straws” like foam and rigatoni.

Ingredients for carbonara sauce

Carbonara sauce causes a lot of controversy among lovers of tradition and lovers of delicious food. “Traditionalists” claim that the most correct pasta recipe includes only pasta, eggs, cheese, bacon and spices, but many people prefer to cook this dish by adding cream and butter to it.

Carbonara sauce with cream is more suitable for novice cooks, since cream lowers the temperature and does not allow the egg to curl too quickly, and this is precisely the trouble that lies in wait for less experienced housewives

Eggs, which are necessarily part of the sauce, can be both quail and (most often) chicken. Some people put only egg yolk in carbonara, which makes the dish richer, but the sauce itself becomes less silky. A compromise solution is to add extra yolk. The so-called “striped” bacon, streaked with bacon, is sometimes replaced with ham. Of the spices, ground black pepper is considered mandatory, but often a little garlic is also put in the carbonara. And, of course, authentic pasta requires a traditional cheese, which is Romano peccarino or Reggiano parmesano, or both.

Carbonara sauce is rarely salted, since the pasta itself is salty, and fried bacon also gives the necessary salty taste

Spaghetti carbonara with cream recipe

In order to cook 2 servings of spaghetti, you will need: – 250 g of pasta; – 1 tablespoon of olive oil; – 1 clove of garlic; – 75 g smoked pork belly; – 2 chicken eggs and 1 egg yolk; – 25 ml cream 20% fat; – 50 g of grated Parmesan; – freshly ground black pepper.

Cut the brisket into cubes, peel and chop the garlic. Heat the oil over medium heat in a large, deep, wide skillet, fry the garlic until golden brown, remove with a slotted spoon and discard. Add the brisket and saute until golden brown. Meanwhile, boil the spaghetti in 3 liters of water until al dente, drain the water. In a small bowl, beat eggs and yolk with cream, add grated cheese and ground black pepper. Place hot spaghetti in skillet, stir to coat with fat. Pour in the egg mixture and, using special cooking tongs, stir the pasta vigorously to coat the pasta with a silky sauce. Serve immediately on preheated plates.
